What do puppies, Tom Hanks and french fries have in common? They’re all nearly universally liked. Fries probably rank somewhere above Tom Hanks and below puppies, but their standing may also depend on the specific fry in question. Fry preferences are personal.

However, a few characteristics distinguish superior spuds. A well-respected method involves cooking the fries twice to ensure a golden, crunchy skin and creamy interior almost like a string of mashed potatoes. For other fan-favorite fries, the accoutrements are as important as the fry.
