Then a 24-year-old university student, Araki embarked on a 100 day cycling trip around the prefectures of Japan with a friend, taking photographs for a fundraiser exhibition and stopping along the way to volunteer in various relief efforts.

Araki funnels these tender memories into his food with great finesse. All the ingredients are sourced from Hokkaido, where he spent a week during his journey.
