Idowu Abdullahi Nutrition experts have given reasons why some cooking methods are injurious to health and provided some substitutes that could be adopted by Nigerians to ensure their meal-making methods are nutrient-preserving. To ensure the use of nutrient-preserving cooking methods, the experts said Nigerians should consider baking, broiling, grilling, or sautéing their food instead of frying it. According to them, eating fried food frequently can be dangerous to health, particularly when consumed in large portions or using unhealthy oils for frying.
Speaking exclusively with PUNCH Healthwise, a Professor of Public Health Nutrition, Ignatius Onimawo, said while using cooking oil isn’t problematic, overheating oil to fry predisposes individuals to serious health risks. The don explained that reusing cooking oil more than two times on a frying pan poses health risks, adding that it may lead to the building up of trans fat. “Ordinarily, there is nothing wrong with using cooking oil.
But the issue is fried foods, because Nigerians love to fry, we are saying that it is not necessary that you fry food all the time, particularly, if you have attained the age of 40 and above because of the fact there are going to be issues of trans fat, issues of cholesterol and others in that nature, so we normally advise that people should not fry food all the times and don’t overuse or overheat oils. “There are some people who use the same oil for frying plantain for fish, yam and othe.
