Celebrity chef Tom Kerridge has shared his step by step guide of how to make the perfect roast potatoes - and you might be surprised. Speaking on a recent episode of Joe Marler's Thing's People Do podcast, Tom opened up about his life and the trials and tribulations of running a restaurant, before telling listeners how he makes roast potatoes. The restaurant and pub owner said: "So, you've got to boil them in salted water, then gently gently just simmer them, don't boil the f*** out of them, so they're cooked all the way through.

" The 51-year-old, who opened his first pub, The Hand & Flowers in 2005, said: "Turn the heat off, then gently take them out with a slotted spoon. Take them out and you put the potatoes onto the cake rack, when they go on there you leave them on to steam dry at room temperature. "What happens is they begin to crack and go all crackly and broken.



(Then you put them) in the oven, (put them on) a tray of hot oil, normally just straight veg oil, none of that duck fat or anything like that (and cook them at) 200-210C. The TV chef continued: "You then bake them until there almost at the level of frying in this level of fat. You then take them out and turn them, all you're doing is making them golden and crispy because you've already cooked them.
