Another bumper crop of new venues opened this year, introducing Perth punters to slick service, cocktail trolleys, futuristic Japanese bar food and, um, party pies. Dining in WA never tasted, or looked, so good. Here are the five best new eateries to try in 2025.

Flawless food, service, wine selection and ambience made Gibney not only the most impressive opening of the year, but in a long, long time. Coastal dining king George Kailis spared no expense in this elegant seaside brasserie and grill south of Cottesloe, earning national attention and more buzz than a beekeeping conference. Young head chef James Cole Bowen and his team focused on local produce, including plenty of WA seafood — his pearl meat ceviche and clever take on the ubiquitous Hiramasa kingfish are both highlights on a menu that evokes the great bistros of Paris and New York.



Meanwhile, sommelier Nina Throsby plucked paired pearlers out of the encyclopedia wine list. Arguably the stars of the show were bar director James Gentile and his silver cocktail trolleys, which clocked up plenty of kilometres in 2024 serving martinis, smoked negronis and the signature Gibney Gibson. Pricey, sure, but in many ways, totally worth every cent.
