During “A Day in St. Tropez” guests enjoyed the culinary offerings of Michelin-star Chef Andrew Ayala with their toes in the sand and sampled various exquisite wine pairings.

Le Jardinier belongs to the The Bastion Collection which boasts 13 dining concepts worldwide but this past weekend’s experience was definitely the beachiest setting for its renowned cuisine. “Our goal was to deliver our Michelin-starred experience in a fun and relaxed, al fresco setting, allowing guests to enjoy the best of French cuisine in a beautiful and inviting atmosphere,” says Ashley Calandra, executive vice president and head of marketing at The Bastion Collection. The culinary team led by Le Jardinier’s Executive Chef Andrew Ayala, The Bastion Collection’s Executive Pastry Chef Salvatore Martone, and Chef de Cuisine Felipe Botero from Le Jardinier Houston developed a menu featuring locally sourced ingredients referencing both Provence and Montauk.



A Day in St Tropez Courtesy of Surf Lodge After settling into their seats, guests were served the first course of the evening, a whimsical plate of burrata, stone fruit, basil seeds and cherry tomatoes. Even if you’ve never eaten at Le Jardinier before, this appetizer would provide insight into the culinary ethos of the brand. “It's a staple on all of our menus,” says Andrew Ayala, Executive Chef at Le Jardinier.

“We change the dish for each season; fresh figs in the fall and pears or citrus in winter, it's all about incorporating nature's ingredients." Their summer rendition gleamed with orange, red and purple fruits and vegetables celebrating the produce of the season and offering a refreshing start to an evening of gastronomy and thoughtfully-paired wines. Of course, being in Montauk the menu incorporated seafood and the main course was striped bass caught just off the hamlet’s coast served with summer squash, lemongrass and Thai basil.

As a storm loomed, with lightning illuminating the sky in the distance, guests enjoyed the dessert course — a carefully constructed strawberry flower tart with mascarpone mouse. For pastry chef Salvatore Martone cooking and plating outdoors overlooking the water was a unique experience. “There’s nothing better than cooking in nature,” says Martone.

To end the night, guests were treated to a sophisticated version “popping bottles” with illuminated Rock Angel bottles presented and served at the table. The event had brought the atmosphere, culinary delights and wines of the South of France to Montauk, a destination that similarly thrives on the ocean and the sun. “A Day in St. Tropez” was a dreamy summer event for food and wine lovers to enjoy a piece of the Côte d’Azur out east.
