A POPULAR Glasgow cafe have announced they will be opening a THIRD venue, as they celebrate their sixth birthday. Entrepreneur Tom McDermott came up with the idea for Sprigg, and has since launced a second store on Sauchiehall Street in the post-Covid chaos in 2021. Now, the 35-year-old has announced another venue is on it's way as Sprigg celebrate it's sixth birthday - but that's about all we know. Tom said: “I can confirm there will be a new Sprigg, and we’ll soon be in a position to reveal where our third location will be.

"People have a preconceived idea of what Glasgow eats, so of course there were doubters when I told friends and family the concept for Sprigg, but I felt this was missing from the market.

I love being in the thick of it, throwing fresh, simple ingredients together and letting a good dressing work it all out. "I also love when I see someone out and about with one of our bowls .

” During it's early success, Sprigg estimates it has sold nearly 500,000 bowls. The Glasgow start-up caters to all dietary requirements, and also serve freshly made soup, and home-made bread. They've been so successful, they are even on track for their first seven-figure turnover year.

Part of their success is down to the treatment of their staff. Sprigg pay their 14 team members the Real Living Wage, make pension contributions, and even guarantee paid breaks. McDermott recognises the contributions his staff make to his organisation saying: "Our staff have a say in everything we do and we support them professionally and personally in any way we can.

" However, the road to success hasn't always been without it's traffic . The start-up almost had to close its doors, as they became one of many small businesses to be savaged by the effects of Covid. But they have since bounced back, and with the plans to expand it appears they are only set to grow further.

McDermott added: "It will feel different to the other two, but it will have everything you've come to expect from Sprigg. "Who knows, if this goes well, there could be another one." And Sprigg aren't the only business expanding in Glasgow this year.

Beauty and make-up giants MAC cosmetics have sent plans to Glasgow City Council for an opening on Buchanan Street. Initial planning permission has been approved for MAC to open the store, where they will be taking over the unit previously housed by T2 tea store.
