What a fabulous year for tomatoes! I miss my own crop since selling the Cotton Gin Inn but have been blessed to have so many friends like Cy and Nancy Rich, and Ernest Knighton drop off beautiful heirlooms from their gardens. While tomatoes are in season and at the height of flavor I recommend finding as many ways to enjoy them as possible. A quick and easy dinner using both tomatoes and basil is caprese chicken.
