When it comes to award-winning restaurants, Vancouver has plenty to choose from. Whether it’s , which was named the best restaurant in Canada at the World Culinary Awards or the recently , we are chock full of good food spots. But, sometimes, we like to look to see what our American friends are doing, and one spot that’s less than three hours away from Vancouver was just listed as a top new eatery.

released its list of the , and Atoma, located at 1411 N. 45th Street in Seattle, Washington, made the list of 14 restaurants. “Chef Johnny Courtney, who co-owns Seattle’s Atoma with his wife, Sarah, had cooked in Denver, Mexico, and Australia before spending several years at Canlis, the preeminent fine dining restaurant in Seattle,” said .



“Those divergent influences are splattered all over the Atoma menu, but aren’t the only touchstones for what emerges: a more open, less rigid, and less nationalist template for American cooking.” Standout dishes mentioned include a beef tartare with Hong Kong-style XO sauce made with local dried geoduck, baked Alaska with ice cream made of parsnips and meringue from charred corn silk, and local lion’s mane mushrooms breaded and fried katsu-style. Starting from Vancouver, Google Maps says it will take 2 hours and 53 minutes if you were to leave the city at 4 pm.
