TRAVERSE CITY — The Kitchen Takeover series has returned to the Little Fleet. A variety of chefs and eateries will be popping up in the kitchen through March. The series started in early November with Dogwood, a hot dog food truck run by the owners of Oakwood Proper Burgers.

Electric Plate Vegan will serve meatless nachos and tacos from Nov. 25-26. Operator Nurah Ikpeama said they have a “very, very miniscule” menu because nearly all their products are made from scratch — from the corn tortillas to the cashew-based cheese to the “meat.



” A ground walnut recipe emulates ground beef for the nachos, Ikpeama said. Jackfruit is used instead of birria for her street tacos. “It takes four to six hours to process the jackfruit,” she said.

“It’s a process. I enjoy it.” She added that though they are not gluten free, they try to reduce the amount of gluten in their dishes.

Ikpeama started the eatery in 2015 in Detroit. She is now based in the Kalamazoo area. “This is new for me,” she said.

“I haven’t done a pop-up in some time. It’s good to branch out to other areas of Michigan.” In mid-December, local butcher Dan Compton will bring a sausage-forward menu to the Little Fleet.

Diners can order sandwiches or skip the bun and instead have sausage over gluten-free polenta. Compton said he makes his own sandwich buns and sausage, whether it is duck or beef. “I’m taking inspiration from Chicago, basing each dish on a neighborhood,” he said.
