Janice Scott, center, presented a program about growing and preserving herbs at the August meeting of the Garden Club of Danville. Club members Marge Hasty, left, and Beth Leahey, right, look on as Scott displays books, several types of preserved herbs, and a potted mullein plant. Those who grow herbs in their gardens know they are abundant this time of year.

In this climate, though, herbs can’t be harvested all year. Scott discussed ways to preserve that abundance for future use by drying, freezing, dehydrating, and adding to oils and vinegar. Herbs can be used in cooking, teas, and soaps as well as for natural healing.

Herbs in the garden attract pollinators, too, in addition to being beautiful. Photo submitted.
