This fully loaded tortilla soup recipe is great for when you're feeling really hungry. By the way, it’s all about loading up on the toppings. And there is plenty of choice you can add to your soup so why not get the kids or the grandkids involved with making the food dish? How to make a fully loaded tortilla soup recipe: Two tbsp vegetable oil One onion, diced One red pepper, deseeded and diced One green pepper, deseeded and diced Two garlic cloves, minced Two tsp Tex-Mex blend One tin chopped tomatoes One x 570g jar of kidney beans with their stock (or one tin, drained) 150g frozen sweetcorn (or freshly shucked kernels if it’s in season) 500ml vegetable or chicken stock Salt and pepper to taste Plain tortilla chips Avocado slices Grated cheese Pickled or fresh jalapenos Diced red onion Chopped coriander Lime wedges for squeezing Firstly, warm a large pot over medium heat and add the oil.



Add the onions and cook until they become translucent and start to smell slightly sweet. Do this for around five to seven minutes. Add the peppers and cook, stirring regularly, for 10 minutes, until softened.

Add the garlic and cook for two to three minutes, until it loses its ra.
