FARGO — The U.S. Department of Agriculture predicts egg prices could rise by more than 40% in 2025, following record highs in mid-February.

Depending on the brand and location, consumers may pay as much as $8 for a dozen eggs. With costs soaring, some shoppers are looking for alternatives. WDAY News spoke with Julie Garden-Robinson, a professor of health, nutrition and exercise sciences at North Dakota State University, about viable egg substitutes.



“Sometimes you have to find a substitute,” Garden-Robinson said. She suggests options such as Greek yogurt or bananas, but warns that substitutions may require recipe adjustments. “Keep in mind that you might have to adjust the baking time or the cooking time — whatever you’re making — because these have varying amounts of liquid,” she said.

For those looking for a more precise alternative, Garden-Robinson recommends aquafaba, the liquid from canned or cooked chickpeas. “Aquafaba has gotten high marks for being a good egg substitute,” she said. “But an easier substitute would be yogurt, applesauce, or one of the other ingredients.

” Experts say half of a mashed banana or a quarter cup of yogurt or applesauce can replace one egg in many recipes. Other alternatives include flaxseed, chia seeds and even avocado. Garden-Robinson notes that while these substitutes work, they aren’t a perfect replacement.

“These substitutes are certainly a viable option, but they’re not the perfect option,” she said. “Th.
