Whether opting for batons or discs, carrots are popular vegetables and a staple on many roast dinners. They can be cooked on the hob or in the oven, but this is often lengthy and it’s easy to forget about them. Luckily, they can be cooked in the microwave, and depending on how many are being cooked, can be ready in as little as three minutes.

This is perfect for Christmas Day or if you are planning on hosting over the festive season. Here’s a delicious recipe which serves eight is ready in under 10 minutes, and can be paired with a delicious herb butter. Ingredients: 80g butter, softened One tablespoon of tarragon One and a half tablespoons of parsley Half a tablespoon of wholegrain mustard 1kg baby carrots Method: To make the butter, mash it together with the tarragon, parsley and mustard, as well as salt and pepper.



Cover and chill until this is needed, it can be made up to three days ahead of time. Trim the long green tops off the carrots and wash them under cold water, gently scrubbing to remove any dirt. Halve the carrots lengthways so they’re all of the same size and put them in a large, microwaveable bowl with three tablespoons of water.

Cover the carrots with a microwaveable plate or lid and heat on full power for seven to 10 minutes until just tender. This is a lot of carrots, so if you’re cooking for four people, only cook 500g of carrots for three minutes. If you’re serving just two people, halve this number again and cook around 250g of carrots.
