The Nebraska State Fair continues through Labor Day. As the Grand Island Independent team hits the fairgrounds for stories and photos, we’ll also file dispatches on the various culinary choices at the fair. There’s a reason why the line is so long at the Nebraska Cattlemen Beef Pit.

People know from experience that the food is darn good. The best food I had at the State Fair Monday was the Beef Pit’s ever-popular prime rib sandwich. The Nebraska Cattlemen Beef Pit is open from 10 a.



m. to 9 p.m.

at the State Fair. I almost ordered the roast beef sandwich, but chose the prime rib sandwich because it’s listed at the top of the three Cattlemen Specials. The sandwich is served with no condiments — just the prime rib inside a bun.

In all honesty, the prime rib doesn’t need any toppings. Just by itself, the sandwich is fantastic. Later in the day, I talked to two people who like to add horseradish and barbecue sauce to their prime rib and roast beef sandwiches.

In retrospect, a little horseradish on top sounds pretty good. Jeff Bahr As all experienced fairgoers know, the Beef Pit is located inside the Pinnacle Bank Expo Center. Fortunately, my timing was good on Monday.

I didn’t have to wait very long at all. By 11:10 a.m.

, the line outside the door totaled 50 people. And it got longer as the noon hour progressed. But the Beef Pit is well-organized.

The Nebraska Cattlemen volunteers know what they’re doing, because they’ve been at it for a long time. Long lines are.
