Photo: Frank McGrath The Old Spot, an award-winning gastropub on Bath Avenue in Dublin 4, has seen quite the evolution. After owners Brian O’Malley and Stephen Cooney bought an old man pub formerly known as The Lansdowne, they eventually found a team to revive its tired auld bones and craft a menu that would sing.

Their famous guest list includes Bono and Ali Hewson, Louis Walsh, Brian O’Driscoll and Colin and Eamon Farrell, but really it’s their locals and charismatic staff that make their house a home. Now, to mark their tenth anniversary, The Old Spot Cookbook has been published. With words by Irish Independent columnist Aoife Carrigy, and recipes developed by head chef Mark Ahessy and his team, the third prong in this delectable triumvirate is general manager Denise McBrien.
