But what drinks might you serve to sum up Belfast? That’s the challenge Phil Ervine and his team at the Spirit Circle faced when they set about devising a tasting experience called Belfast by the Glass. After much research, they eventually came up with an alcohol-infused view of the city’s colourful and often troubled past – and six accompanying drinks that might just surprise you.
