With another academic year beginning and throngs of Oregon State University students taking to the streets of Corvallis once again, the opening of a late-night cookie shop could not be better timed. And by late, we mean LATE. The aptly named Insomnia Cookies is a national chain — common in university towns — that promises warm cookies delivered right to your door.
The new location is situated on the corner of Northwest Kings Boulevard and Monroe Avenue, and is open from 11 a.m. to 1 a.
m. Sunday through Wednesday — and 11 a.m.
to 3 a.m . Thursday through Saturday.
The menu is replete with options for cookie lovers and more generic sweet tooths alike. There’s a variety of classic cookies, as well as “deluxe” cookies that are chunkier and stuffed with treats like salted caramel and chocolate peanut butter cups. They also have brownies, cookie cakes and ice cream by the pint.
Ice cream can be served atop a cookie or a brownie, or in the form of a “cookie’wich” — Insomnia’s take on the classic ice-cream sandwich. The company is seemingly a welcome addition to the off-campus scene, with some online buzz prior to its arrival. A Reddit user recently took to the thread r/corvallis to announce that “the cookies are incredible” at the now open-for-business Corvallis locale.
It may face some competition, as the similarly popular franchise Crumbl Cookies has a location in Corvallis on Northwest Ninth Street. Though Crumbl also delivers, it is only open until midn.
