Filled with aubergines, courgettes and peppers – plus more vegetables – it's an easy way to eat more of your five-a-day.

Ratatouille Cooks in: One hour 15 mins Serves: four people Two red onions Four cloves of garlic Two aubergines Three courgettes Three red or yellow peppers Six ripe tomatoes Half a bunch of fresh basil Olive oil A few sprigs of fresh thyme 400g tin of quality plum tomatoes One tablespoon balsamic vinegar Half of a lemon Method Preparing the ingredients Peel and cut the onions into wedges, then peel and finely slice the garlic.

Trim the aubergines and courgettes, deseed the peppers and chop into 2.5cm chunks. Roughly chop the tomatoes.

Pick the basil leaves and set aside, then finely slice the stalks. Heat two tablespoons of oil in a large casserole pan or saucepan over a medium heat, add the chopped aubergines, courgettes and peppers and fry for around five minutes. Spoon the cooked vegetables into a large bowl.

To the pan, add the onion, garlic, basil stalks and thyme leaves with another drizzle of oil. Fry for 10 to 15 minutes, or until so.
