The recipe , from his 5 ingredients - Quick & Easy Food cookbook, is branded “not too tricky” and serves two. This simple combination will have you enjoying a deliciously vibrant meal in no time and is also ideal for barbecue days. Ingredients Two 120g free-range skinless chicken breasts Two limes Four cloves of garlic Two heaped tablespoons peanut butter One or two fresh red chillies Method Start by preheating your grill to medium-high.
Score the chicken breasts in a criss-cross pattern, then rub them with one tablespoon of olive oil, a pinch of sea salt, black pepper, and the finely grated zest of one lime. Place the chicken, criss-cross side down, into a cold 26cm non-stick ovenproof frying pan and heat it on medium-high. While the chicken cooks, peel and finely grate some garlic into a bowl.
Squeeze in the juice of 11⁄2 limes, stir in the peanut butter, and add enough water to achieve a smooth, spoonable consistency. Finely slice the chilli and incorporate it into the sauce according to your heat tolerance. Taste the sauce and adjust the seasoning as needed.
