Gorse Tom Waters made it clear he was here to bring modern Welsh multi-course tasting menus to the Cardiff food scene, championing the best of Cymru in the process, and this is exactly what he has achieved with Gorse. The Pontcanna restaurant became the first in Cardiff to be awarded a Michelin star during the award ceremony in January 2025. It's a remarkable accolade for a restaurant, which only 22 covers across a handful of tables, that opened in May 2024.
