The American dish “clams casino” is delicious but can be a little finicky. However, substituting fish fillets for clams makes for an incredibly simple main meal. Ingredients 650g white fish fillets (such as flathead, ling or snapper) salt and pepper, to season 50g butter 1 tbsp vegetable oil 4 rashers of bacon, rind removed and diced 1 small brown onion, finely diced 2 cloves garlic, roughly chopped 1 small red capsicum 1 cup panko breadcrumbs 2 tbsp finely shredded parsley, to serve lemon wedges, to serve Method Heat your oven to 180C fan-forced (200C conventional).
Season the fish fillets with salt and pepper and fit them snugly into a baking dish. Heat a large frying pan over medium heat and add the butter, vegetable oil and bacon. Fry the bacon until lightly browned, then add the onion and garlic and fry for a minute or two until softened.
Add the capsicum and fry for a further minute, then stir through the panko. Scatter the breadcrumb mixture over the fish, season with a little more salt and pepper, then bake for 20 minutes until the fish is cooked through and the breadcrumbs browned. Scatter with parsley and serve with lemon wedges.
